How do evacuated tubes work?

The tubes cover a super-efficient conducting heat pipe. When the sun hits the absorber plate on the heat pipe, the fluid within begins on a vaporization-condensation cycle, transferring heat to the heat-exchange at the top of the tube.

Just a few moments of bright sun provides enough heat to burn your hand, but the glass tubes stay cool to the touch.
